Or peanut butter coconut granola.
When I make my smoothie bowl, I like to add a drizzle of peanut butter. So, I thought maybe I could be more efficient and add the peanut butter to my granola.
What resulted is a crunchy, flaky granola perfect for sprinkling (with a few nuggets for snacking) that reminds me of a nutter butter cookie.
This is my go-to recipe when my daughter requests granola.

Ingredients
- 2 cups rolled oats*
- 1 cup unsweetened shredded coconut
- 1/4 cup Power Seed Blend*
- 1/3 cup peanut butter*
- 1/3 cup maple syrup
- 1-2 teaspoons pure vanilla extract (or whatever feels right)
- 1 tablespoons avocado oil
- 1/4 teaspoon sea salt
- 2 teaspoons cinnamon (or a tablespoon, follow your heart)
- 1/4 teaspoon sea salt
- 1/2 – 1 cup of chopped roasted peanuts (or hazelnuts are also delicious)
- course sea salt (for sprinkling)
Directions
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Toss the oatmeal on a sheet pan and bake for 10 minutes, stirring occasionally, until lightly browned. In the last two minutes, I like to add the coconut and Power Seeds to give them a little toast, too.
- Wait a few minutes and then make your peanut butter mixture. Add the oil, peanut butter, maple syrup, vanilla and salt to a small saucepan and bring to a boil over medium heat. Then turn off the heat so the peanut butter doesn’t dry out.
- Transfer the toasted oats and seeds to a large mixing bowl and sprinkle with cinnamon. Now everyone is nice and toasty. Give it all a good mix, and then add the peanut butter mixture and combine well.
- Reduce the oven to 300 degrees.
- Pour the mixture back onto the pan, spread and pat down with your fingers or a silicone spatula if you’re fancy.
- Sprinkle with sea salt.
- Bake for 25-30 minutes, until light golden brown. Cool for at least 2 hours before breaking into chunks. And try not to eat it all at once.
Notes
*Any rolled oats you like, old fashioned, gluten-free, high protein.
*I always go for a natural drippy peanut butter with no added sugar, but regular peanut butter will work, too.
*My Power Seed Blend is a mix of flax seeds, hemp seeds and ground chia seeds. If you don’t have all three, add seeds of your choice.
*This will stay good for about 2-3 weeks in an airtight container.
Makes a great gift, especially if you have to ship it!
